Carrot Cake Hot Cereal (Gluten & Sugar Free, Vegan)

This is the type of recipe I would eat during an elimination diet or healthy challenge. I’m not even going to pretend this is something I make often, but if you’re looking for some new ways to get healthy foods into your diet, this is a great recipe. Likewise, this might be something to try feeding your baby once they start eating solids. 

 

Ingredients:

4 cups diced carrots (about 6 carrots)

1/2 cup unsweetened shredded coconut

1/4 teaspoon ground cinnamon

Pinch sea salt

2 cups water (or less as needed)

1/4 cup flaxseed meal

2 tablespoons coconut oil

30 drops vanilla liquid stevia (or your favorite sweetener to taste)

 

Directions:

  1. Combine carrots, coconut, cinnamon and salt in a medium pot. Add up to 2 cups of water. You want the water to just cover the carrots, so you may need to use a little more or less. Bring to a gentle boil for 15 minutes or until the carrots are easily mashed with a fork.
  2. Take the pot off the heat and mash the carrots. Stir in flaxseed meal, coconut oil, and stevia. Taste and add an extra pinch of salt if needed.
